Hello sweet friends,
Here we sit in the thick of the Coronavirus quarantine, and many of us are running out of things to do with our kids. In this no-frills post, I am rounding up a few of our easiest recipes on the blog. Hopefully this will give you a something fun to do with your kids, and something yummy to eat in the process.
We are going to bake it through this, y’all!
First up is our simple pound cake recipe. This cake works great for birthdays, or basic (but delicious) cupcakes.
Basic Pound Cake
- 1 1/2 cups sugar
- 1 cup butter
- 5 eggs
- 2 tsp. baking soda
- 2 cups flour
- 1/2 tsp. salt
- 1 tsp. vanilla

Pre-heat oven to 350 degrees

Combine sugar and butter

Slowly beat in eggs

Add vanilla

Combine dry ingredients in a separate bowl and add once combined

Beat mixture until smooth

Pour batter into pan

Bake until slightly golden on top and there is “no jiggle” on top! 20-25 minutes.

Wait for the cakes to cool all the way down before removing them from their pans. Once removed, you can decorate and serve, or slice the rounded tops and stack the layers with your favorite frosting!
This homemade dog treat recipe is one of our most popular recipes on the blog. Your dog will love these treats, and the ingredients are so wholesome and delicious, you can eat them yourself!
- 2 cups whole wheat flour
- 1 cup creamy peanut butter
- 1 tablespoon baking powder
- 1 cups skim milk
- 16 ounces non fat cream cheese room temperature
- 3 teaspoons honey
- 2 teaspoons vanilla
- 3 teaspoons cinnamon

Preheat oven to 375 degrees.

Mix together all of the ingredients for the dog treats in a large bowl.

Combine until blended. The dough will be a bit dry and crumbly at first, but as you work with it, the ingredients will begin to come together. Add two tablespoons of skim milk if needed.

Roll dough out and use a cookie cutter to cut out your dog treats.

Place dog treats on a greased cookie sheet and bake for 10-15 minutes, or until golden brown.

While your dog treats are cooling, combine 16 ounces of room temperature cream cheese with honey, vanilla and cinnamon until blended.

If you want your frosting to be a certain color, add a few drops of food coloring to the mixture and combine.

Place frosting in a piping bag and decorate-away!

Next up is our simple shortbread cookie recipe. I love these cookies because they are easy to make, buttery, and just sweet enough. They also go really well with a cup of coffee in the morning! 🙂
How to make easy and delicious shortbread cookies.
- 1 cup (softened) butter
- 2 cups all purpose flour
- 3/4 cup confectioner’s sugar
- 1 teaspoon vanilla extract

Pre-heat oven to 350 degrees.

In a stand mixer, combine all of the ingredients. Blend on a high speed for about five minutes. It will seem as though the mixture will never come together, but just wait, the ingredients will eventually blend into perfect cookie dough.

Knead cookie dough and roll out onto a floured surface. Cut desired shapes and place on a parchment paper-covered cookie sheet.

Bake for 8-10 minutes or until slightly brown at the edges. Let cook land decorate with royal icing or any other desired toppings.
Lastly is a classic fudge recipe. Typically you would make this fudge during the holidays, but this is so easy, and such a comforting chocolate fix, that I couldn’t help but add it to the post.

- 1 cup dark chocolate chips
- 1 cup milk chocolate chips
- 1 14 oz. can sweetened condensed milk
- 1 teaspoon vanilla
- 1 cup topping (we chose crushed Andes mints)

Combine first four ingredients and microwave for 45 seconds, until smooth.

Place parchment paper or wax paper in a 9 x 9 dish.

Pour mixture into dish, add topping, and refrigerate until set
