Happy Valentine’s Day!
This week we have been working on sweet little Valentines for teachers and friends. We decided to make pink (vanilla) cupcakes with cream cheese frosting and whimsical heart cookies on top! Initially we were going to use the extra large conversation heart candies as our toppers, however due to a flukey shipping shortage of some kind, you can’t find the candy anywhere! Thanks for nothin’, Covid!

This is a great go-to vanilla cake recipe which you can serve as is, or add food coloring for a creative twist.
- 1/2 cup unsalted butter room temperature
- 1 1/2 cup granulated sugar
- 3/4 cup vegetable oil
- 5 eggs
- 1 tsp vanilla extract
- 3 cups all purpose flour
- 1 tbs baking powder
- 1 1/2 cup buttermilk
- food coloring (optional)

Pre-heat oven to 350 degrees.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar. Combine on medium speed.

Slow the mixer and add the oil, eggs, and vanilla extract. Increase to medium speed.

Stop the mixer and add flour, baking powder, buttermilk, and food coloring if desired.

Fill cupcake cups half full with cake batter. Bake for 15 minutes or until a toothpick comes out almost dry.

Allow cupcakes to fully cool before adding frosting!

- 8 ounces cream cheese
- 1/2 cup unsalted butter room temperature
- 3 cups confectioner's sugar
- 2 tsp vanilla extract

In the bowl of a stand mixer, combine the butter and cream cheese.

Add the confectioner's sugar and vanilla and slowly combined.

Once combined, increase the speed and combine for one minute.
