I am going to keep this post short and sweet!
If you want to teach children about where their food comes from, log quality time with your family, and score loads of culinary inspiration, check out a “you- pick” farm in your area. This week I took my kids to the Boone Hall Plantation farm in Mount Pleasant, where they picked buckets of fresh strawberries. We took the berries and made incredible strawberry muffins from scratch. The recipe was simple and outrageously delicious, so I will post the details, below.

- 2 cups MASHED berries
- 2 eggs
- 2/3 cup sugar
- 1/3 cups vegetable oil
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup confectioners' sugar for sprinkling on top.

Preheat oven to 375 degrees.

Grease muffin pan or use paper muffin cups.

Combine eggs, sugar and oil until well blended.

Add additional ingredients except confectioners' sugar, and blend until combined.

Pour batter into pan and bake for 15-20 minutes, or until a toothpick comes out almost dry.

Once baked, let the muffins cool and sprinkle with confectioners' sugar! The kids love this part!!

These look DELICIOUS!! We haven’t gone berry picking this year, but we did last year on Johns Island, and I made these delicious strawberry scones. It was so nice meeting you at the Charleston Blog Society event yesterday, and I can’t wait to follow along with all your baking adventures 🙂
