Hello sweet friends,
Have you ever accidentally turned your mixer on high speed when you had dry ingredients in the mixing bowl? No? Okay, so when you have a mixing bowl full of flour and turn your mixer on too high, everything blows up in your face. There is flour on the ceiling, flour on your eyelashes, flour on the floor. Well for me, this week was the equivalent of the flour explosion. Everything that could go wrong, did. However, I dusted myself off, pulled myself together, and did the one thing that always makes the day a little brighter, I baked.
When you need a recipe to brighten up someone’s day (or your own :)), this Citrus & Cream Tart is perfect. Orange, Cool Whip, fresh grapefruit juice, and vanilla collide for the ultimate creamy, dreamy dessert. You can make this tart with a pre-made crust, or make an easy graham cracker crust of your own. Either way, this tart is easy to prepare, and tastes like ray of sunshine.
Listen up. This is something I shared with my teenage daughter, and it is a good reminder for all. Life is going to bring challenges, and it is okay to feel down. However, you have to shake off the mess and keep it moving. Take time to bake a recipe, go for a walk, or do whatever brings you joy. Don’t ever give up. Ever. Behind every cloud is a big, blazing sun, so sit back and watch the clouds roll by.
