Hello sweet friends,
Our final post in the Bath and Body Works themed recipe series includes this Sweet Cinnamon Pumpkin Cake recipe, inspired by the fall candle of the same name. As I mentioned in my previous posts, this entire concept was dreamed up by my teenage daughter who loves all the fall fragrances at Bath and Body Works. At the end of the day, anything can inspire great recipes, and this sweet cinnamon pumpkin cake is certainly no exception!
This cinnamon cake is extra moist due to pumpkin filling added to the batter. Unlike the pumpkin cupcakes, however, this recipe pumps up the cinnamon flavor and several other ingredients to give it that over-the-top cinnamon sweetness. Top it off with cream cheese drizzle, and you have the perfect recipe for any seasonal celebration.

- 1 1/2 cups granulated sugar
- 3 large eggs
- 15 ounces Libby's Pumpkin Filling
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 3 tbsp cinnamon
- 2 tsp baking soda
- 1 tsp nutmeg

Preheat oven to 350 degrees F. Grease a loaf or cake pan with cooking spray or vegetable oil.

Combine sugar and eggs in a stand mixer fitted with the paddle attachment.

Add pumpkin filling and vanilla and combine.

Slowly add in the remaining dry ingredients, including flour, cinnamon, baking soda, and nutmeg.

Pour batter into pan and bake for 25 minutes, or until a toothpick comes out dry. Allow to cool and add any cream cheese frosting or other toppings.
