Hello friends!
Mother’s day is this Sunday, and we have whipped up a fun and easy brunch menu sponsored by Kodiak Cakes. From One Minute Muffins that are perfect for breakfast-in-bed, to an unbelievably delicious morning glory loaf, we have something everyone will love for your Mother’s Day celebration.
Happy Mother’s Day!
- 2 cups Kodiak Cakes All Purpose Baking Mix
- 1 cup granulated sugar
- 3 eggs
- 2 tsp cinnamon
- 2 tsp baking soda
- 1 cup grated carrots
- 1 cup dried mixed berries
- 1 apple peeled and chopped
- 1 cup vegetable oil
- 2 tsp vanilla

Preheat oven to 350 degrees

With the exception of the Kodiak Cakes Baking Mix, combine all other ingredients in a bowl.

Slowly fold in Kodiak Cakes Mix, and gently combine to create batter.

Place your mixture into a well greased loaf pan and bake for 25-30 minutes. until fully baked in the center to prevent falling.
For this recipe, we used a container of Kodiak Cakes Minute Muffin Mix. This recipe is easy enough for older kids to prepare for the perfect Mother's Day breakfast in bed treat.
- 1 container Kodiak Cakes Minute Muffin Mix
- 1/3 cup milk or water
- 1 cup cup heavy cream
- 2 tbsp. granulated sugar
- fresh berries

Add milk or water to Kodiak Cakes Minute Muffin Mix.

Stir until combined.

Either keep the contents within the Muffin Mix Container or pour into a microwave safe container of your liking.

Microwave for one minute and fifteen seconds.

Whip heavy cream and two tablespoons of sugar until fully whipped.

Top muffin with whipped cream and fresh berries.
We used Kodiak Cakes all purpose baking mix and followed the instructions for "pizza crust" on the back of the box. From that recipe we did the following....
- 1 8 oz. container whipped cream cheese
- 12 oz. pre-coooked ground turkey sausage
- 1/2 cup finely chopped chives
- 1 tsp sea salt
- 1 tsp pepper
- 2 tbsp butter
- 3 tbsp melted butter
- 2 tbsp honey

Preheat oven to 350 degrees.

Once you have made the Kodiak Cakes "pizza crust" as referenced on the back of their All Purpose Baking Mix Box, do the following.

Once your dough has risen, roll the dough out on a lightly floured counter into a long rectangular shape.

Spread cream cheese down the center of the entire rectangle of dough.

Sprinkle turkey sausage over all of the cream cheese.

Add chives, salt, pepper and butter.

Roll the dough with all of it's yummy contents into a long cylinder. Cut into one inch slices.

Place one inch slices on a parchment paper covered baking sheet and bake for about 10 minutes.

Microwave honey and 3 tablespoons of butter in a small microwave safe dish until melted. Stir and pour over turkey sausage swirls. Serve hot!
