Happy Spring!
Time is hoppin’ by so fast, and with spring break and Easter at our doorstep, I was eager to take on an Easter-themed baking project this year that was quick, simple, and baskets full of fun.
In looking through by baking cabinets, (look at how messy this is, y’all)……
….I found a basic Easter Bunny cookie cutter. We have done tons of bunny cookies in the past, and while I liked that cookies were a convenient option, I didn’t want to duplicate a previous project. Rather, we decided to take a different angle on the Easter Bunny cookie, (hardy-har) and instead of decorating the bunny from the front, we decorated the bunny from the back. Introducing the Cottontail Cookie!
For the cookies we used our basic cut-out cookie recipe, and for the icing we used our classic royal icing recipe. We have been using these recipes numerous times this year, because they are so delicious, and you don’t have to have a ton of skill to make really pretty cookies. Furthermore, for those of you who don’t bake often, I created a (super low-budget) tutorial on how to make and decorate with royal icing. Hopefully it will help you get those snazzy smooth professional looking cookies with very little experience and effort!

- 1 cup butter
- 2 cups sugar
- 2 eggs
- 4 cups flour
- 1/2 tsp baking powder
- 1 tsp salt
- 1 tsp vanilla
- 1 tsp almond extract
- 3 tbsp milk

Mix butter and sugar in a stand mixer.

Add eggs.

In a separate bowl, combine flour (sifted is best), baking powder, and salt.

Add these ingredients to the mixing bowl and combine.

Add in vanilla extract, almond extract, and milk.

Place dough on parchment paper and let chill in the refrigerator for one hour.

Once chilled, roll out on a floured surface and cut cookies.

Bake at 350 degrees for 8-10 minutes.
- 1 16 oz. box confectioner's sugar
- 1/2 cup pasteurized egg whites (Egg Beaters)
- food coloring as needed
- 1 tsp lemon juice

Combine powdered (confectioner's sugar) and egg whites in a mixer.

Add lemon juice and food coloring.
