Earlier this week, my daughter Madison asked if we could have a bake sale to support endangered species, (particularly the African Wild Dog). There are so many amazing endangered animals, but she felt strongly that the African Wild Dog was the one that we needed to support. As a mother, I had to commend her passion and enthusiasm, so we began to put together a plan to bake the best animal cookies ever, to raise awareness and funds for the Wild Dog habitat.
This cookie recipe is so simple, quick and yummy.
Additionally, you will probably have most, if not all of the ingredients already stocked in your kitchen. Yay! The cookies themselves have a shortbread taste which isn’t too sweet, and the icing is very sweet, giving each little cookie a rich and balanced flavor. You can add any sprinkles that you like, but these little round sprinkles give the cookies a bit of a crunch which totally rocks my world.
Once we finished these animal cookies, we took them to the teacher’s lounge at school and placed a sign about the bake sale project. Tomorrow we will collect and submit the earnings to the “World Wildlife Endangered Species Conservation Fund.” Regardless of the amount that the kids collect, what matters is that they found a cause, developed a plan, and made an effort to support their cause. I hope they take that same passion and determination with them as they grow up and learn about more opportunities make a difference in the world around them.

- 1 lb. butter
- 1 cup sugar
- 1 tsp. salt
- 4 cups flour
- 3 tsp. lemon juice
- 16 oz. powdered sugar (1 box)
- 1/2 cup water
- 3 drops food coloring
- sprinkles

In a mixing bowl, combine butter, sugar, salt and lemon juice.

Slowly add flour into the mixture and blend until completely combined.

Wrap dough and refrigerate for two hours at minimum.

Preheat oven to 350 degrees.

Once chilled, sprinkle flour onto work surface and rolling pin.

Cut a section of the dough while leaving the rest in the refrigerator to keep chilled.

Roll dough into 1/4 inch thick and cut into shapes.

Bake for 8-10 minutes, until slightly golden brown.

Cut another section of dough, and continue.

Combine 16 ounces of powdered sugar with 1/2 cup of water.

Add food coloring and mix until color is combined.

Place glaze in a bowl and dip each cookie in the glaze. Place on baking sheet or wire rack.

Get your sprinkles on!!
